Pantry lunch alert 🚨 

Ingredients:
- 1/2 tin of peeled tomatoes
- 1/2 tin butter beans, triple rinsed
- 1 red onion, sliced *more veg the better - capsicum works well!
- dollop of ricotta
- 1 egg
- Oregano, S&P , EVOO
